I don't know much about legumes, but are there any legumes that you can plant in florida? For winter or for spring?}

Perennial Peanut, (which is called "Florida alfalfa") is nutritionally similar to alfalfa, with the advantage of needing less fertilizer, water and pesticides to grow it. It needs to be sprigged in, and it takes a while for it to become established, but it does very well in Florida and makes lovely hay if put up correctly.

We have discussed perennial peanut or peanut hay before. Run a search on it and it should come up.
