My horse makes alot of noise when stressed and has been diagnosed with an entrapped epiglottic - I am just wondering what could cause this? Was she born with it or does it happen spontaneously? She also just got over pnemonia, could the entrapped epiglottic have caused that? Also, she drops alot of food out of her mouth when eating, wondering if it could cause this also.

Welcome, to HA, Gayle.
Until DrO replies, the only thing I know is that epiglottic entrapment causes expiratory problems (that's where the noise comes from) and swallowing problems.
I think it can be corrected with a very simple operation.

Actually Gayle the problem has many ways of manifesting itself and whether she had this early or not is information best provided by someone who knew her when she was young. But it does have important prognostic significance. As to the recent respiratory infection if the problem was not chronic, it may well be related and disappear with complete recovery.

There are many horses which drop food that don't have this problem however so they are probably not related.

Dr O: So can you fill me in on the ways it might be manifesting itself and also the important prognostic significance of whether or not she had it while young? That is a little vague, I tried reading up on it but am not having much luck. I am having the laser surgery next week.

Sorry to have been cryptic. The main point is if the problem has been present since before the infection it makes it unlikely that this is a transient problem that will fix itself with time. And the longer the problem has been well documented the more likely time alone will not cure it and surgery more likely to be necessary and helpful.
