If a mare was a twin herself, will it make her more likely to get pregnant with twins?

Probably but so few get born that we don't know for sure.

Should I have her ultra sounded to make sure she doesn't have twins, or let it run it's course and see if one of the embryos sloughs?

An ultra sound is a good idea so that if there are twins you can pop one to give the other the best chance of being healthy and survive.
