If I take my horse to a fancy barn to sell on commission, how can I prevent them from getting together with a friend (as a fake buyer) and getting my horse for cheaper and later selling her for a bunch on the circuit or something?

You can't. That is why you must make it clear what is the minimum amount of money you need in your hand to sell this horse. You should only deal with folks you trust. It is your best protection.

I usually structure the deal to provide incentives to the seller. Usually the seller gets a 10 to 30% commision on a sell. I will set the minimum price (the smallest amount I will take for a horse + the commission) and then give them half of everything over my minimum. Nothing like a motivated seller to make a deal go through!

If someone buys her then turns and sells her for a big profit that is just how the horse business works. Be sure you understand the boarding / showing / selling agreement up front.
