I was recently told that the NSCs in stored hay will increase over time. Is this true? Are there any studies that have been done to prove or disprove this?

You would think this would be a well answered question but I cannot find a definitive answer. What is documented is a significant decrease in NSC's when first cut and baled. I agree with Diane that NSC's are most likely to decrease with storage, do to oxidation of the sugars, but I do wonder if there is an increase in non digestible sugars like fructosamine which are partially responsible for some of the laminitis cases. This is less clear but I do not think a significant problem.
