I have tried to breed my mare three times this summer. Now Im going to do a biopsy and cytology (she is 18 years old). The odd observation we have made during her cycles is that her follicles grow at an unpredictable rate and reach suprisingly large sizes, the last one was over 57 mm. The first time grew steadily but the next two cycles cycles she grew, then shrank about 5 mm then jumped up to 51 to 57 mm in one day. I am wondering if this might be an indication of defective eggs.

No, these types of irregularities are very common.
